Well at least dont bury them... My guess would be low light levels. Your nutrients do look like they are there. See the same thing in tomatoes and corn, with high light levels the secondaries/offshoots/suckers come on very strong. Blast em at the nodes with artificial light if needed.

Thankfully we are getting some sunshine tomorrow before more rain by the end of the week so hopefully that helps a little bit as the roots get more established. Grow lights have been on and keeping it toasty in there. Hoping I feel better about them in a week

The rain wont help but yeah if you can get them some more am/pm sunshine. I know you have trees, but any low angle light that gets under the leaves is good. White weed fabric or something to reflect light under the plant.
